How Does Food Quality Affect Human Health?
How does food quality affect human health?

Food quality i.e. nutrient density refers to the comparative levels of nutrients contained in the same amount of the same food. In other words how many grams of calcium are in 100 grams of your garden green beans versus 100 gms of green beans from another source.
The comparison from a high brix garden may surprise you.
As nutrient density increases in the foods you consume, the amount of minerals available for the body's use can also rise. In addition to more minerals, nutrient-dense foods also have increased carbohydrates.
The combination of minerals and carbohydrates together is the key reason why Nutrient-Dense foods have such an effect on increasing human health and our sense of well-being.
Carbohydrates (sugar) provide the energy the body needs to digest foods and run the entire metabolism. When carbohydrates are low, the digestion and metabolism both slow down and begin to use body tissues as the available fuel. With few carbs, minerals are lacking, and the nutritional requirements of our organs are not met opening the door to degenerative & chronic disease.
