Food quality i.e. nutrient density refers to the comparative levels of nutrients contained in the same amount of the same food. In other words how many grams of calcium are in 100 grams of your garden green beans versus 100 gms of green beans from another source.

The comparison from a high brix garden may surprise you.

As nutrient density increases in the foods you consume, the amount of minerals available for the body's use can also rise. In addition to more minerals, nutrient-dense foods also have increased carbohydrates.
The combination of minerals and carbohydrates together is the key reason why Nutrient-Dense foods have such an effect on increasing human health and our sense of well-being.

Carbohydrates (sugar) provide the energy the body needs to digest foods and run the entire metabolism. When carbohydrates are low, the digestion and metabolism both slow down and begin to use body tissues as the available fuel. With few carbs, minerals are lacking, and the nutritional requirements of our organs are not met opening the door to degenerative & chronic disease. A good way to prevent/slow degeneration is to understand the best nourishment comes from foods with a high brix reading. Farmers using the Brix model of crop improvement are worth supporting.

Fall Foliage Hiking in the Adirondacks


 Fall day hiking at its finest in the Adirondack Alps.  Peak leaf weekend at the gateway to the outdoors in Lake Clear New York.  Across the lawn, to the lake shore and the mountain beyond.  St. Regis mountain is an exciting day hike approachable from the water or the road leading from Paul Smith's.
Great views await you at the top, along with an old fire tower.   During the summer the summit is a busy place, in the fall however you may luck out and have some quiet time at the top.  Many different lakes and ponds are visible from the top as well as an excellent view of the High Peaks.  How many lakes and\or peaks can you spot from the top?
